Hop on the Vegetable Bandwagon

Scanning the lists of anticipated food trends for 2013, one thing has become clear. This year is the year of the vegetable.

Whether it’s making vegetables the main ingredient in your meal, new and inventive ways of cooking vegetables or offering them as interesting snacks, veggies are in.

I don’t know about you, but this is one bandwagon I’m happy to jump on.

"You Say [Sweet] Potato…"

I learned a lesson about sweet potatoes once while teaching a cooking class in Northern BC.

I had requested sweet potatoes for a recipe, thinking that the only ones available at the small local grocery would be orange. When the organizer presented me with the light yellow flesh variety, I realized that I should have been more specific about the colour. Maybe I should have asked for “yams.”

The confusion about yams and sweet potatoes is ongoing.

Bringing the Taste of Mexico Home

When I think of Mexico (which is strangely often), vivid images of bright colours, intense warmth and vitality come to mind.  These concepts seem to personify the culture and certainly are descriptive of the cooking of Mexico.

Homemade salsa is a portal into Mexico. It is an easy way to transform an everyday meal into a family fiesta on the shores of Puerto Vallarta.

You don’t need to be eating Mexican food to incorporate fresh salsa.

Ripe for the Picking

People think I’m crazy because I’m not big on chocolate or decadent desserts (yes, seriously).

To me, fruit gives the perfect amount of sweet.  Luckily, B.C. is knee deep in berries and stone fruits at this time of the summer. 

Blackberries, raspberries, strawberries and blueberries are often the first foods that you see when you enter the produce section and I find it difficult to leave room in my shopping basket for anything else.

Apple of My Eye

BC apples are available through the winter and spring (thanks to cold storage), but I think they really taste best when they’ve been freshly picked.

Around this time of year I begin to eagerly anticipate the first harvest of BC grown apples.

It seems like there is an apple for every eating occasion.
